One-Pot Lasagna Soup

Ingredients
  

Meat & Aromatics:

  • 1/2 lb ground beef
  • 1/2 lb Italian sausage
  • 3/4 cup onion diced
  • 1 tbsp garlic minced

Broth & Sauce:

  • 4 cups chicken broth
  • 24 oz spaghetti sauce
  • 1.5 tbsp tomato paste

Seasonings:

  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Pasta & Cream:

  • 8 oz lasagna noodles broken into bite-sized pieces
  • 1/3 cup shredded mozzarella cheese
  • 1/3 cup grated parmesan cheese
  • 1/2 cup heavy cream

Instructions
 

Sauté Aromatics

  • In a large pot, heat some oil over medium heat. Add the diced onion and sauté for 3-4 minutes, until softened.
  • Stir in minced garlic and cook for an additional minute.

Cook the Meat

  • Add ground beef and Italian sausage to the pot. Season with half the garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Cook until browned, breaking up the meat as it cooks. Drain excess fat.

Build the Soup Base

  • Stir in the tomato paste and cook for 1-2 minutes.
  • Then, add the chicken broth, spaghetti sauce, and remaining seasonings. Stir well and bring to a simmer.

Cook the Noodles

  • In the same pot, add the broken lasagna noodles to the simmering soup. Stir occasionally and cook for 10-12 minutes, until the noodles are al dente.

Finish with Cream & Cheese

  • Once the noodles are cooked, stir in the heavy cream and let it heat through for 2-3 minutes.
  • Then, mix in mozzarella and parmesan cheeses, or sprinkle them on top before serving.

Serve & Enjoy

  • Ladle the soup into bowls, garnish with fresh basil or parsley if desired, and serve with a side of garlic bread or salad.
