- 6 boneless skinless chicken breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- 1 onion diced
- 2 cups grape tomatoes halved
- 1 tbsp minced garlic
- 4 oz fresh mozzarella sliced
- 1/4 cup fresh basil sliced
- 2 tbsp balsamic glaze
Preheat Oven – Set your oven to 400°F.
Prep Ingredients – Dice the onion and slice the grape tomatoes.
Season Chicken – Pat chicken dry and season both sides with salt, pepper, paprika, onion powder, garlic powder, and Italian seasoning.
Sear Chicken – Heat olive oil in a large pan over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
Bake Chicken – Transfer chicken to a baking sheet and bake for 15 minutes or until the internal temperature reaches 165°F.
Sauté Vegetables – In the same pan, cook onions and tomatoes over medium heat until softened and juicy. Add minced garlic and cook for 1 more minute.
Melt Mozzarella – In the last 3 minutes of baking, remove chicken from the oven, top with mozzarella slices, and return to bake for the last 3 minutes or until melted.
Assemble & Serve – Spoon the sautéed onion-tomato mixture over the chicken, garnish with fresh basil, and drizzle with balsamic glaze. Serve immediately!
