Ingredients
  

  • 4 Bone-in Chicken Thighs skin-on thighs
  • 1-2 Large onions sliced
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 2 tsp Italian Seasoning
  • 1/2 tsp Salt & Pepper
  • 1 packet Lipton French Onion Soup Mix
  • 1 cup Beef Broth
  • 1 tbsp Garlic minced
  • 1-2 tbsp Olive Oil for cooking
  • 1 cup Cheese of Choice Optional: swiss, mozzarella, gruyere

Instructions
 

Preheat the Oven

  • Preheat your oven to 375°F (190°C).

Season the Chicken

  • Mix garlic powder, onion powder, Italian seasoning, salt, and pepper. Rub evenly over each chicken thigh.

Sear the Chicken

  • In a cast iron skillet, heat olive oil over medium-high heat. Place chicken thighs skin-side down and sear for 3-4 minutes, until golden and crispy. Flip and sear the other side for 2-3 minutes. Set aside.

Caramelize the Onions

  • In the same skillet, add more oil if needed, then add sliced onions. Cook over medium heat, stirring occasionally, for 15-20 minutes until golden brown. Add minced garlic during the last minute.

Mix the Sauce

  • Combine beef broth and Lipton French onion soup mix in a bowl.

Combine Everything

  • Spread caramelized onions evenly in the skillet. Nestle seared chicken thighs on top. Pour the broth mixture over the chicken and onions.

Bake

  • Cover the skillet with foil and bake for 30 minutes. Remove foil and bake an additional 10-15 minutes for crispy skin.

Optional Cheese

  • For a cheesy twist, sprinkle shredded cheese over the chicken during the last 5 minutes of baking until melted.

Serve

  • Let rest for a few minutes, then serve hot with caramelized onions spooned over the top.
