Ingredients for Pork Chop Marsala

Before we embark on our culinary journey, let’s gather the essential ingredients for Pork Chop Marsala.

When selecting pork chops for this dish, opt for boneless cuts that are about an inch thick. I personally wouldn’t go with the thin sliced pork chops as those can easily become dry and tough.

Look for chops with a nice marbling of fat, as this will ensure they stay juicy and flavorful during cooking. 

If you prefer, you can also use bone-in pork chops for added flavor.

Preparing the Pork Chops

Now it’s time to prepare our pork chops for cooking. Start by seasoning them generously with salt, pepper, and Italian seasoning on both sides.

In a large skillet, heat some olive oil over medium-high heat and sear the pork chops until they’re golden brown on both sides. 

TIP: You don’t want to cook the pork chops all the way through yet because we will be finishing them off in the sauce. Be sure just to sear the pork chops to avoid drying them out.

Remove them from the skillet and set them aside while we prepare the Marsala sauce.

Making Marsala Sauce from Scratch

To make the Marsala sauce, we’ll need some sliced mushrooms, minced garlic, chopped onion, chicken broth, and, of course, Marsala wine.

In the same skillet used to cook the pork chops, sauté the mushrooms, garlic, and onion until they’re soft and golden brown. I like to cook mine down a little longer to ensure that the mushrooms and onions get a rich caramelization. 

Once you mushrooms, onions, and garlic are cooked to your liking, sprinkle on a little flour. Make sure to mix this and keep everything moving until you can no longer see any white from the flour. 

Then, deglaze the pan with Marsala wine, scraping up any browned bits from the bottom of the skillet. Add the chicken broth and let the sauce simmer.

Finish it off by swirling in a pat of butter for extra richness or add in some more seasoning to give it that extra punch of flavor.

Cooking Pork Chop Marsala

Now that our sauce is ready, it’s time to return the pork chops to the skillet and let them simmer in the sauce until they’re cooked through and tender. 

Be sure to spoon the sauce over the pork chops as they cook to ensure they’re coated in all that delicious flavor. 

Once the pork chops are done, transfer them to a serving platter and spoon the mushroom Marsala sauce over the top.

To ensure your Pork Chop Marsala turns out perfectly every time, keep these tips in mind:

  • Don’t overcrowd the skillet when cooking the pork chops, as this can prevent them from browning properly.
  • Use a meat thermometer to check for doneness, ensuring the pork chops reach an internal temperature of 145°F.
  • If the sauce is too thick, simply add a splash of chicken broth to thin it out to your desired consistency.
  • If the sauce is too thin, consider adding a flour-water mixture to give it a little thicker consistency.
  • Leftovers can be stored in an airtight container in the refrigerator for up to three days and reheated gently on the stove or in the microwave.

  • 4 Boneless Center Cut Pork Chops
  • 4 oz Mushrooms
  • ½ cup Marsala Wine
  • 1 cup Chicken Broth
  • ½ cup Onion diced
  • tbsp Flour
  • 1 tbsp Butter
  • 1 tbsp Olive Oil
  • 2 tsp Italian Seasoning
  • Salt and Pepper to taste

Instructions
 

  • Prepare your vegetables by slicing your mushrooms, dicing your onion, and finely chopping your garlic.
  • Season pork chops generously with 1 tsp of Italian seasoning and salt and pepper to taste on both sides.
  • In a large skillet, heat olive oil over medium-high heat. Add pork chops and sear until golden brown, about 2-3 minutes per side. Remove from skillet and set aside.
  • In the same skillet, melt butter and sauté the mushrooms, garlic, and onion and cook until they start to brown and form a caramel color.
  • Then, add your flour and keep stirring until you can no longer see any white from the flour.
  • Pour in Marsala wine, scraping up any browned bits from the bottom of the skillet. Cook this down, until the alcohol has reduced.
  • Add in your chicken broth and return pork chops to the skillet, nestling them into the sauce.
  • Reduce heat to medium-low and let simmer for 8-10 minutes, or until pork chops are cooked through.
  • Serve pork chops hot, garnished with fresh parsley. Enjoy with your favorite sides!
